Meet Danny, a damper making, boomerang throwing cowboy in the heart of Alice Springs.
In the abandoned old quarry from the 1930’s gold rush, is the setting where you’ll experience one of the Red Centre’s best experiences. Watch kangaroos jumping high on the quarry tops and enjoy the wood smells of an Aussie BBQ, warming you under the outback stars.
Danny, who took over the old quarry from his parents Pat and Norma, has been making his Rum and Raisin Damper for as long as he can remember. He shows off these skills to Inspiring Journeys guests baking the Damper on the fire, serving the boozy bread warm and with helpings of cream.
This rustic recipe won’t disappoint, get baking this great Aussie comfort food!
What you need:
- 2 cups of self-rising flour 1 cup of water
- A Pinch of Salt
- Raisins soaked in rum overnight
- Mixing bowl
- Hot oven (cooking time 20 – 25 minutes about 200°C)
How to make:
1. Sift flour and mix in all dry ingredients, bind together adding water, slowly bringing into a dough with your fingers adding the rum-soaked raisins last.
2. Once it resembles a dough-like consistency, gently knead until the mixture and the surface is smooth, allowing you to shape into a round loaf.
3. If you don’t have a campfire or oven, place on a baking tray dusting the loaf with flour.
4. Bake for 20-30 minutes until golden brown, check all is cooked through using a knife.
5. Serve warm, cut into slices and add helpings of cream.
